RECIPE: Cinnamon Roasted Sweet Potato

These sweet potatoes have to be the sweetest and most delicious vegetables I've ever made. 

Every time I make them for someone, they ask me if there is sugar on there. No, no sugar at all! Just sweeeeet cinnamon! They are also super easy to prepare and keep great in the fridge for a meal prep option.

 

Ingredients:

2-3 medium sweet potatoes, cut into wedges

2 tbsp. olive oil

2 tsp. ground cinnamon

 

Method:

Pre-heat oven at 200 degrees celcius. 

Line a large baking tray with baking paper (optional).

Arrange sweet potato evenly on the baking tray.

Sprinkle sweet potato with cinnamon and drizzle with olive oil.

Cook for 40 minutes, turning sweet potato over half way through cooking time. Cook until soft and golden brown.
